A portrait of Don José Amezola García
Originally from Arandas, Don José learned the craft of jimador when he was 17 years old.
He recalls how at the time he witnessed how his father, Don Isaac Amezola Ramírez, turned the coa into an extension of his mind. They say that the agave tests you the first time you approach it, and that dexterity comes with a lot of practice. His heritage is vast, his maternal great grandfather Don Felix García had a small tavern with Tahona, a fermentation in wooden tanks and distillation in copper stills. Don Felix planted his agave and transformed it into mezcal wine in a paddock that is called to this day the Canvas, about 15 minutes from the center of Arandas.
After 25 years of harvesting, Don José dedicates himself mostly to the care of the agave fields. Building on a vast knowledge of the location of the best parcels, he carefully selects the best seeds and gives the plants the care that they require. He loves to share the beauty of his crops. Of his six children, one of his sons, José Enrique Amezola, has taken on the family tradition and dedicated himself to the jima. His legacy is assured within the family, whose secrets and wisdom about agave are passed along and shared in everyday life. These are referred to as the mezcales.
