TEQUILA
WHAT IS TEQUILA?

Tequila is a distilled spirt made from the Blue Weber agave plant and produced in designated areas in Mexico, primarily Jalisco. The history of tequila dates back to the Aztecs, but the spirit they were drinking was pulque, a drink made from the fermented sap of the agave plant.

HOW IS TEQUILA MADE?

Tequila is made according to the following steps. 1/ Harvesting: planting, tending and harvesting of the agave piña. Maestra Tequilera Ana Maria Romero and our exceptional team of dedicated jimadores select the best agaves from the best plots of red clay soil in the Jaliscan highlands — higher elevations produce a smoother tequila with more fruitiness. 2/ Cooking: we then proceed to slowly cook our mature agaves in stainless steel autoclaves to convert complex carbohydrates into simple fermentable sugars. This process softens the piña, and allows us to obtain our distinct vanilla and caramel flavours. 3/ Extraction: piñas are crushed in order to release the juice for fermentation. 4/ Fermentation: our rich fermentation process takes longer than the typical tequilas. We meticulously monitor the process to maintain a delicate balance between temperature, PH and sugar levels. Our Maestra Tequilera selects natural yeast strains for fermentation. 5/ Distillation: Mijenta is ready for a delicate triple distillation in pot stills, where ferments are separated by heat and steam pressure to create tequila. Mijenta is not filtered which enhances its unique character 6/ Ageing: our Mijenta Reposado is aged up to 6 months in oak barrels to create an aged expression of Mijenta. 7/ After 45 days of resting, it is time to bottle our delicous tequila, so it can be savoured by tequila lovers all over the world.

WHAT ARE THE TYPES OF TEQUILA?

The types of tequila are Blanco, Joven, Reposado, Anejo and Extra Anejo. The full Mijenta range will come in four expressions: Blanco, Reposado, Anejo and Cristalino.

WHAT IS A BLANCO TEQUILA?

Blanco is un-aged tequila that is bottled shortly after distillation, although it can be kept in stainless steel tanks for a few weeks before bottling. Blanco is Mijenta’s core expression, the purest form of the agave plant meets Mijenta’s quality and artistry.

WHAT IS A REPOSADO TEQUILA?

A reposado is aged for between 60 and 364 days (less than one year). Mijenta Reposado is aged up to 6 months in Oak casks. It is a softer and fuller expression of Mijenta for those who prefer a more mellow and rounded flavor with a hint of oak.

HOW MANY CALORIES IN TEQUILA?

Pure agave tequila is low in sugar. It only has 69 calories per ounce and no carbohydrates thanks to the distillation process.

IS TEQUILA GLUTEN FREE?

Tequila is made from blue agave, a plant that’s naturally gluten-free. As long as the bottle says “100% agave,” then it is gluten-free.

WHAT ARE THE BENEFITS OF TEQUILA?

Tequila has become the spirit of choice for the wellness-minded consumer, in part due to the benefits of it being a paleo-friendly spirit as it doesn’t use grain or wheat. Mijenta Tequila elevates this to another level through its production and distillation process.

HOW TO DRINK TEQUILA?

Pour about one ounce of tequila in a tequila glass or a designated Riedel glass. Hold the glass at the stem (not the bowl), raise the glass to eye level and look at the tequila’s color. Swirl the tequila gently in its glass. Note how the tequila clings to the walls of the glass, looking for the “string of pearls” effect. Take a small sip, swishing the tequila around in your mouth for about 10 seconds, letting the liquid travel over different parts of your tongue. Repeat and Enjoy!

– Mijenta let’s the agave plant take its time: it takes between 6 to 8 years for a single plant to reach maturity for harvest.

– Mijenta uses zero pesticides and herbicides to grow the purest agave plants, while precise cuts in the heads and tails of the plants help control temperatures and account for the cool mornings in the highlands. Then, Maestra Tequilera Ana Maria Romero and our exceptional team of dedicated jimadores select the best agaves from the best plots of red clay soil in the Jaliscan highlands — higher elevations produce a smoother tequila with more fruitiness.

– Mijenta’s products are handmade, numbered, and embrace traditional methods, crafting excellence through a bespoke distillation process: through the rich fermentation of slow cooked unfiltered agaves and the delicate distillation and pot stills.

WHAT WAS THE INSPIRATION BEHIND MIJENTA’S RABBIT LOGO?

The Aztec legend of “Centzon Totochtin” – which tells the tale of Mayahuel, the goddess of the agave plant, and Patecatl, the god of Pulque, whose union produced 400 divine, mischievous rabbits with a taste for good company, good spirits and good times.
